Recipe Step 1

Recipe Step 2

Through the Maillard reaction, the well-roasted pork neck is cut into bite-sized pieces.
Then, add the prepared well-aged sour kimchi and stir-fry it.
Add more minced garlic according to your taste.
(Although you don’t have to put garlic in kimchi)
Add red pepper powder for color and spiciness.
Reduce the heat a little from the point where kimchi and red pepper powder are added.
The red pepper powder burns on high heat, so you need to adjust the heat.
Stir well to mix the seasoning.

- Pour rice water little by little
Pour the prepared rice water just enough to submerge the ingredients.
Boil the broth or water by pouring it while watching the amount of water to bring out the taste of the ingredients.
When the ingredients are cooked to some extent, add the rest of the prepared rice water.

If you have fish sauce and soup soy sauce at home
It adds a deep flavor to the soup.
If you don’t have it, it actually tastes great even if you add chicken stock.

Kimchi jjigae tastes better the more time you spend boiling it.
